RAMEN-YA HIRO
A TASTE OF HOME, AT A DIFERENT ONE
When you have lived somewhere as a child there are many things you don’t remember; two years became a blur of fuzzy memories in the distance, that just came back occasionally and unannounced. That is what happened the first time I ate at Ramen-ya Hiro.
Quedarà exagerat, però recordo perfectament el moment de probar el primer gyoza de veritat, potser feia 5 anys que tornàvem a ser a Barcelona i el gust va activar la memòria. Vam estar d’acord; si tancàvem els ulls érem a dos cantonades del pis de Shibuya-ku. Afegint-hi molts divendres i després molts sopars, i en total, moltes converses; en aquestes parets hi ha un trosset d’història nusful.
Since then, it has become not only the best form of “comfort food” but also a sort of sanctuary of another piece of home. A peculiarity of this particular “traditional fast food” restaurant is that the reduced number of tables in proportion to the quality of the food make a long line out on the street. The cue in a way becomes part of the ritual, meeting up with someone, having a beer while you wait in line and catching up on life.
For these reasons, when we had to choose a recipe to draw for the intensive course of Food Takes Command, I had no doubt.


The objective was to understand how food shapes the city and exemplify it through a recipe of our choice. Our decision was Ramen, and specifically Hiro’s, for multiple reasons.
As a consequence we recognized the three urban scenarios. The supermarket express lunch, boiling water included, the ramen stall food festival, and Ramen-ya Hiro’s waiting line.

In the second part we payed attention to the cooking process of each ingredient in different scenarios. Ramen-ya Hiro’s kitchen served as the restaurant, to which we added a noodle stall and the home version of the instant format.
HUMAN SCALE
The first part was a comparison between traditional ramen and instant ramen (not entirely shown here) in which we researched the ingredients and manufacturing process of its three ingredients, broth, toppings and noodles.
